Chocolate Red Wine Cake

Chocolate Red Wine Cake

This delicious cake is inspired by the German rotweinkuchen. It has an interesting texture; dense and chocolatey, yet light at the same time, and manages to taste of chocolate, fruit and spice all at once. It makes an excellent dessert with some cream, ice cream or crème fraîche, and is equally good with hot drink in the afternoon, too.

Chocolate Red Wine Cake

Makes 1 large cake

250g butter

250g caster sugar

1 tsp vanilla extract

4 large eggs, beaten

3 tbsp cocoa powder

1 tsp cinnamon

Pinch salt

250g self raising flour

125ml red wine

125g dark 70% cocoa chocolate, melted and cooled

1)   Preheat the oven to 180C/ 400F/ gas mark 6

2)   Grease and line a 20cm round cake tin with non-stick baking paper and set aside

3)   Place the butter and sugar together into a large mixing bowl. Beat together really well until light and fluffy.

4)   Stir the vanilla extract into the beaten egg and then add the mixture a little at a time to the butter and sugar, beating together well after each addition.

5)   Sift in the cocoa, cinnamon, salt and self raising flour. Fold gently into the wet mixture.

6)   Pour in the red wine gradually, mixing well. Finally, pour in the melted chocolate and stir gently to ensure all ingredients are well combined.

7)   Transfer the mixture to the prepared tin and bake for 45-55 minutes until cooked. Test the cake to see if it’s cooked after 45 minutes. Remove from the oven and insert a cocktail stick into the centre. If it comes out clean, it is cooked. If some liquid mixture sticks to the cocktail stick, it’s not cooked yet. Return to the oven for another 5 minutes and test again.

8)   When the cake is cooked, remove from the oven and allow it to cool in the tin for 15 minutes. Then, remove from the tin, peel away all the paper and leave to cool on a wire rack until fully cool before slicing and enjoying.
